Kabbelend Old Vine Cinsault - Natural Wne 2023
These cinsault grapes are from right on the border between Paarl and Swartland and come from vineyard born in the early 1990’s. Farmed organically, these dry-grown bush vines have very little rainfall (less than 300mm per year) and means that the grapes are super concentrated. With this in mind the bunches are picked early in the harvest with 50% going into a whole cluster ferment (storks and all) - this is what gives the wine it’s backbone, red fruit, perfume and spiciness. Left to ferment with natural yeast in stainless steel the juice gets pumped over a few times to extract more of the brilliant crunchy red fruit flavours, pressed, and then goes back into stainless steel to settle. Drinkability is the name of the game here, think Beaujolais over Burgundy.
