The terrific team-up of Irish whiskey bonder J.J. Corry and bartending superstar Ryan Chetiyawardana (aka Mr. Lyan) has resulted in this extraordinary spirit – Fierfield Barberry! Combining Irish whiskey with a host of ingredients from the Irish landscape, including the likes of pepper dulse, dandelion, Irish butter, toast, elder, and barberry, it`s a robustly flavoursome spirit, with fruity, autumnal notes running through it. On the nose fresh berries with lots of zingy acidity: redcurrants, blackcurrants and grapes. The fruit gets jammier as the spirit sits in the glass but keeps its refreshing sharpness. Toast and honey notes develop along with a touch of mint and leafy greenness. The palate has rich berry jam with baking spice and a touch of honey sweetness leads, sweeter than the nose suggested but still with balanced berry tartness. Sultanas and raisins develop, supporting the jamminess and complementing notes of stewed apple and baked pear. Fruity caramel, building spice and candied peel finish.

This should make a delicious twist on a `Whiskey Sour`.

60ml J.J. Corry x Mr Lyan Fierfield Barberry
20ml Lemon Juice
10ml Gomme Syrup
3 dashes Angostura Bitters
Garnish with fresh Red Currants
