When it comes to sparkling wine, one thing is certain: not all bubbles are created equal. And honestly? That’s exactly what makes the world of fizz so fascinating.

This Christmas, we’re celebrating the magic of bubbles — how they’re made, why they taste different, and how you can choose the perfect sparkle for your season. Whether you’re reaching for something elegant and toasty or bright and fruit-forward, your bubbles tell a story long before you pop the cork.

And here at Page & Sons, we’re all about helping you discover those stories through our bi-monthly picks, hand-selected to bring you the best of every style.

We’ve also got some sparkling news from Kent: As a heartfelt thankyou, WildShark Vineyard, fresh off their win as a Visit Kent Hidden Gem, are offering an exclusive treat. Buy 18 bottles or more and enjoy a complimentary guided tour and tasting for two at Wild Shark Vineyard — the perfect chance to explore their eco-friendly estate, learn about Kentish terroir and enjoy a tutored tasting right where the magic happens.

The Tale of Two Bubbles

Before your next celebration, here’s a fun fact: every sparkling wine starts life as a still wine. The magic happens during the second fermentation, where sugar and yeast create those tiny, joyful bubbles.

How that second fermentation happens determines the style, flavour and feel of the wine. Let’s dive into the two main methods — and why they matter.

Traditional Method 🍾

(Used for Champagne, Crémant and many English sparkling wines)

If sparkling wine were a fairy tale, this would be the royal path.
In the Traditional Method, the second fermentation happens inside the bottle itself. The wine then rests on its lees (spent yeast), developing complexity over time.

Expect:
✨ Very fine bubbles
✨ Creamy texture
✨ Notes of brioche, nuts and citrus
✨ A sense of occasion in every sip

This is your go-to if you love richness and elegance — the kind of sparkle that feels like a celebration before you’ve even clinked glasses.

Charmat (Tank) Method 🥂

(Used for Prosecco and modern styles like Supernova)

This is the fresh, modern, good-vibes-only approach to bubbly. With Charmat, the fizz is created in sealed stainless-steel tanks, which lock in fruitiness and aromatics.

Expect:
🍐 Juicy pear and peach
🍏 Crisp apples
🍋 Bright, zesty freshness
🌟 An easygoing, crowd-pleasing personality

This style is perfect for parties, brunches, and anyone who loves sparkle with a playful side.
