Westwell Pelegrim Sparkling
Pelegrim is a traditional bottle-ferment sparkling wine using a blend of 40% Pinot Noir, 35% Meunier and 25% Chardonnay produced using 20% reserve wines from the previous 5 years, with a dosage of 8g per litre. The fruit comes from Champagne and D?on clones which we ferment to 5 bar rather than 6 to accentuate the fruit and give a richer mouthfeel. The wines are lees-aged in bottle for 36 months to give depth and biscuity aromas which only bottle fermentation can deliver.
