Hotly anticipated single malt from Waterford. The terroir focused operation began work in 2014, filling casks with spirit distilled from barley grown at individual farms around Ireland. With this landmark release, the Waterford team have drawn on their mature stocks of single origin whisky and married them together, balancing the flavours derived from different terroirs to create depth and balance. The result is a characterful dram, oily in texture and slightly spicy with gingerbread and clove alongside fresh apple, marmalade and toasted grains. On the nose earthy barley with hint of freshly baked bread and melting butter. Cooked orchard fruit, vanilla blossom, and lemon zest. More citrus on the palate, now slightly sweeter with grapefruit and orange. Honeyed cereals, caraway, and a subtle savoury hint of olive. Oily barley lingers on the finish.

Ireland`s Waterford Distillery was founded back in 2015 by Mark Reynier, formerly the co-owner of Bruichladdich. Interestingly, the distillery is actually a converted brewery which had previously produced that well-known Irish stout, Guinness. These days, whiskey is the drink of choice being made at Waterford, with a focus on local barley, showing that terroir most definitely has an impact on the final spirit. Reynier and his team work with a host of local farms to create Single Farm Origin single malt whiskeys, which debuted in 2020. Not only that, Waterford has also produced the first Irish whiskey that has been certified as organic by the Organic Trust – Waterford Arcadian Gaia!

A superb single malt, best enjoyed neat.
