The golden rum is made in-house from scratch, using the surplus molasses from sugar production. This is different from most Rums which are often cheap, poor quality Carribean rum with sugar and spices added to create an intensity of flavour to mask the spirit. Because they have control of the entire process from fermentation, distillation, cask ageing, blending and bottling, they have created a beautifully smooth spirit which is a classic Rum, but with a honey-like delicacy which they associate with the aromas of the Weald. A strong nose of vanilla at first then floral with a distinct whiff of honey. The nose is spicy, peppery, very very smooth, lovely round smooth texture. Notes of vanilla raisin on the (fairly short) finish

A carbon-neutral micro-distillery on a mission to develop breathtaking spirits the slow way using surplus produce and a tiny environmental footprint. Named Greensand Ridge after the hills that surround the Weald, from where they source their flavours.

Greensand Ridge produce a range of products from the heart of Kent. From Gins and Rum to Eau-de-Vie`s and Brandies. Exceptional products from surplus produce.

The distillery was built from the ground up to have a vanishingly small carbon footprint, and to have a positive impact on the enviroment and local community. Which in turn their sustainable distilling method has won them notable awards. The stills and equipment from distilling to the bottling line are powered by green electricity. The distillery`s still is run on electricity instead of a gas steam boiler which although more expensive the company believes this to be better than reliant on fossil fuels.

They are the first distillery in the UK to demonstrate carbon neutrality, and their assessment covers all distillery operations. This ensures that, even though they have a light touch on the lands, any emissions in their supply chain are understood, assessed, and offset with carbon credits.

Greensand Ridge`s suggested serve is a highball glass with plenty of ice, and a premium and slightly tart apple juice. Try 50ml of spirit and 75ml of apple juice. Add a sprig of mint to garnish.

Or for a richer long cocktail pair with Ginger Ale (not ginger beer) and a wedge of lime. For classic serves try a Mojito with apple juice instead of soda, and a daiquiri if you want to be a hero for the evening.
